Just as another review, this is a great flexible recipe, especially for a quick healthy meal. My family loved it and told me to make sure I add it to the recipe box! I didn't have any peppers so that diminished the flavor a bit. To add some flavor, I added basil, lemon zest, lemon juice, and used fresh instead of frozen green beans as well as brown instead of white rice. That seemed to add some depth to the flavor. Thanks for the recipe!
