This review is coming late, so Ive forgotten the particulars of this dish, what I did and didnt like, but I remember it was good! And simple. Guess Ill just have to make it again.

Just as another review, this is a great flexible recipe, especially for a quick healthy meal. My family loved it and told me to make sure I add it to the recipe box! I didn't have any peppers so that diminished the flavor a bit. To add some flavor, I added basil, lemon zest, lemon juice, and used fresh instead of frozen green beans as well as brown instead of white rice. That seemed to add some depth to the flavor. Thanks for the recipe!

This a great recipe. I didn't have any mushrooms so I threw in a handful of small stick carrots. I used all broth. My husband, who does not eat veggies, had three helpings. I am going to make this for company.

My family really liked this recipe. I diced the chicken, used cheesy rice, and chopped the veggies into very small bites, but followed the recipe otherwise. My daughter didn't there were vegetables hidden inside and my husband asked for more. A winner!

This was very good but I have to admit that most of the flavor in mine came from the pre-cooked rice in a bag I bought (2 bags of Safron flavored Archer Farms-Targets').. I added frozen green beans and celery; simmered 5 minutes then added some corn the last few minutes along with the rice. I think the chicken was bland even though I sprinkled extra lemon pepper on top of it.. It needed to be seasoned before cooking IMO... I ended up cutting it up and mixing it into my rice because the rice was very flavorful!.. :)

This is a good, forgiving, flexible recipe. I didn't have all the exact ingredients, but I was able to add what I had and substitute what I didn't have. Very simple, delicious meal. My family ate it right up. Thanks for the recipe!
