We love these quesadillas, but it is very important that you use the right fajita seasoning mix. I used a generic store brand and hated it. But the McCormick brand fajita seasoning is amazing. Totally delish!

This recipe was so good. I made it for my family. I altered the recipe slightly but it was just delicious. I recommend this for a good mexican night. I made Goya spanish rice for a side with ole de paso hot sauce.

My daughter loves these, I omit the bacon and cook them on a dry griddle until the tortilla starts to brown slightly. Top with sour cream and extra salsa. A family favorite.

I made this for a brunch on New year's Day. It was a big crowd pleaser! I bruched all the shells with olive oil so they wouldn't stick or dry out.

These were very good. I used frozen red and green peppers and onions and it worked out great. Just be sure to defrost them and pat them dry first. I bought fully cooked Southwestern style chicken strips and used those instead of cooking the chicken separately. Also added a little bit of chili powder for some extra spice. Everyone loved them!

I don't much like spice, so I used a package of mesquite marinade mix and a little honey instead of fajita seasoning. Delicious!

This was quite bland, and no one in the family found it to be very reminiscent of a quesadilla. We tried dicing the peppers and chicken much smaller afterward, adding jalapenos and extra cheese; but it still left something to be desired. Would not make this recipe again.

This is the best tasting quesadillas i had ever tasted. i made the recipe as it. The second time, i made it with firm diced tofu instead of chicken. it works also.

These came out great. I deviated slightly from the recipe: Instead of grilling the chicken, I sauteed it with the fajita seasoning. I mixed the seasoning with 4 oz of Corona beer before combining it with the chicken. I also only used one green and one red pepper. (With a little over a pound of chicken breast, this made about six quesadillas.) I coated the tortillas on one side with oil, put in the filling, folded the tortilla in half, and fried it until the cheese was melted and the tortilla was golden brown on one side. Once the cheese melted I flipped it over and browned the other side. Then I sprinkled some more cheese on top and put them in the oven to keep them warm (could only cook two at a time in the frying pan) & so the cheese on top would melt. Came out great & the whole thing was very easy to put together.

Excellent Quesidillas! Just wanted to gives a heads up on two issues. First, most fajita mixes contain MSG (some people are adverse to this, understandably) Here is a good mix recipe: 3 Tbsp. cornstarch 2 Tbsp. chili powder 1 Tbsp. salt 1 Tbsp. paprika 1 Tbsp. sugar 2-1/2 tsp. crushed chicken bouillon cube 1-1/2 tsp. onion powder 1/2 tsp. garlic powder 1/2 tsp cayenne pepper 1/4 tsp. crushed red pepper flakes 1/2 tsp. cumin Preparation: Combine all of the ingredients in a small bowl. Pour into an airtight container.Makes the equivalent of 3 packets of commercial or purchased Fajita Seasoning Mix. Also, to crisp a tortilla; spread tortilla with butter before baking or wet with a bit of water. Awesome recipe!
