I thought this was merely okay. I made these for a party, and they were probably my guests' least favorite appetizer. A previous reviewer who claimed the oven dried them out too much was right. It probably would have been better to stir fry the chicken with the vegetables, rather than broiling it.

These turned out awesome. On top of everything else, I added sliced olives to the filling and served the quesadillas with guacamole, sour cream, and salsa. They were a hit at my Spanish-themed office party!

Nice change of pace. I changed this a little. I cut the recipe in half, used chili seasoning and baked the chicken in the oven for 40 minutes in foil. I used only 1 red pepper and did not use the bacon bits. You can just adjust this recipe to your taste. However, this is not something I am going to go out of my way to make

SOMETHING SO SIMPLE, YET SO GOOD! I DID LEAVE OUT THE BACON BITS! ADD A DOLLOP OF SOUR CREAM AND GUACAMOLE ON THE SIDE AND WOW, THESE QUESADILLAS TASTE GREAT! AND THEY ARE VERY COLORFUL! I WILL FOR SURE BE ADDING THIS ONE TO MY RECIPE BOOK AND THIS WILL DEFINITELY BECOME A FAMILY FAVORITE!

My husband said he loved these! That was a first! Im a great cook but he is very picky! I even forgot to put the fajita seasoning in the chicken and they turned out great! Some changes I made: I covered the entire tortilla with everything then topped with another tortilla, sprayed with butter flavor pam and then placed under the broiler. I flipped them over after 2 minutes or so, sprayed the other side. I also added green tabasco before I topped it with another tortilla. FAST AND EASY!

These were great. I subbed real bacon for the bacon bits (of course) and served these with a side of refried beans, a dollop of sour cream and a jar of salsa. There were no leftovers!

I made a change after making it according to the recipe. I heated them in an electric skillet (or a frying pan would be fine too) rather than the oven. The oven dried them out too much. I added a little butter to toast them (like making a toasted cheese sandwich). This made them much tastier!

I made these last night and they were gone in an instant. I've been looking for something different to cook at home and this is one of many recipes that I wanted to try. I added Spanish rice, chips and salsa with avocado as a dip. This was a wonderful meal. Thanks for the recipe Heather.

Used no oil whatsoever. Left out the veggies as my kids only like chicken and cheese. Used a colby/jack finely shredded blend and served with sour cream on the side.
