This was quick, easy and delicious. My kids said it was better than Fridays or Bennigans anyday! Made mama smile. I added smoked bacon seasoning and sauteed my onions and chicken together before putting them in the tortilla. I only used mozzerella since we have an intollerance to cheddar. I made a honey mustard sauce to dip and it was just fantastic. Thank you for this great, quick and easy lunch or dinner idea. You helped me answer the question "how am I gonna cook the chicken today?" :)

This recipe is so quick and simple and easy to change to suit your tastes. I chopped up some leftover chicken, used green onions and added some chopped tomatoes. I used a combination of mexican cheese blend and 3 cheese blend. I served them with a spicy ranch dip. So good.

SO GOOD! I used 1 chicken breast cut into strips sauteed with onion and fresh parsley, salt, pepper, minced garlic, cumin and mexican oregano. I also used Fiesta shredded cheese blend because that's what I had on hand. Instead of the ranch dressing I used regular sour cream mixed with taco sauce to top. This is going to be a regular meal around our house! Think I will try it with steak next time or whatever I have left over. Served with the Sweet Corn Cake from this site.

Thanks for the recipe! This was a perfect recipe for my dayhome. The children had a lot of fun helping me make these, as much as they do when we make home made pizza. I love the fact that this is an excellent base recipe that allows you to be really creative. You can tailor to suit any tastes, from little ones to more adventurous adults. Though I didn't eat these, DH LOVED THEM! Versatile & Quick. Cooked the chicken in a tbs of olive oil and Penzey's Chicken Taco. Used Marble Jack cheese, cuz that's all I had. I omitted the onions, for the five year olds and instead of Ranch, just used Light Sour Cream.

So quick and easy! I too had most of the ingredients already in the house. For the chicken, I cooked a chicken breast, cut into strips, in a skillet with some butter, onions, black pepper to taste, and red sweet peppers to add some more flavor. What a fun meal to make! I had some chips and salsa too to complete the experience.

This made a really quick lunch. I didn't have pre-cooked chicken, so I used boneless breasts cut into strips. I seasoned them with salt and pepper and fried them in vegetable oil. I cut them into bite sized pieces and added to the onions. They smelled great while cooking and could even use a little bit of bell pepper the next time. Very simple and very good!

This recipe was easy to make. I had all the ingredients at home, so I didn't need to run to the store. As a side dish I added mexican rice and salsa. It tasted delicious.

I used whole wheat tortillas and green onions. Added taco seasoning and also some chopped tomatoes. Came out good, wish I had some guacamole to have with them...
