INGREDIENTS
1 (10.75 ounce) can condensed cream of mushroom soup, undiluted
1 (4 ounce) can chopped green chilies
1/2 cup chicken broth
1/2 cup finely chopped onion
1/2 teaspoon pepper
2 cups cooked elbow macaroni
1 cup cubed cooked chicken
1 cup shredded Cheddar cheese

DIRECTIONS
In a bowl, combine the first five ingredients. Fold in the macaroni and chicken. Transfer to a greased 1-1/2-qt. baking dish; sprinkle with cheese. Bake, uncovered, at 350 degrees F for 30 minutes or until bubbly.

Nutritional Analysis: One serving (prepared with low-fat mushroom soup, low-sodium broth and reduced-fat cheese) equals 268 calories, 8 g fat (0 saturated fat), 40 mg cholesterol, 420 mg sodium, 31 g carbohydrate, 4 g fiber, 19 g protein. Diabetic Exchanges: 2 starch, 2 lean meat.

This was delicious--kind of Mexican, kind of Southern comfort food. I did make a couple of changes: I sauteed the onions before adding them, I added a can of sliced mushrooms, and I added a dash of garlic powder and salt. I baked for 20 minutes without cheese, then added the cheese and baked for another 20 minutes.

We enjoyed this recipe very much. I made only two small changes to it. I used cream of chicken soup instead of mushroom, and I used 1/2 cup of salsa instead of chicken broth. Those two changes gave it more of a Mexican flair, and the salsa gave it some nice flavor.

I thought this was great and easy! My fiance and I aren't fans of mushrooms so I substituted cream of mushroom for cream of chicken and instead of cheddar cheese, the 4 mexican cheese blend. Will be making this again, thanks!

I was a little scared to try this one thinking it might be bland or weird. It came out great! I added some garlic powder and sauteed onions. I tasted it before I put it in the oven and thought, not so great. But something happened while cooking because the finished product was really good. I also added some frenchs onions the last few minuets of cooking.

My family loved this recipe. It tasted like a Mexican dish. I did substitute elbow macaroni for rotini I had on hand it tasted great. My husband requested I definitely make this again.

This was a very good recipe. I used 1/2 cup of salsa and 1/2 cup broth, I added extra chicken, garlic powder and onion powder for a little more flavor. Still needs a little more kick. With a little tweaking, this could be a great recipe!
