I would have given this 5 stars, but since I made a few changes, I am giving it 4. I love All Recipes because I can read the reviews of other people and it is extremely helpful! I used a can of diced Mexican-style tomatoes in place of the tomato sauce and enchilada sauce intstead of taco sauce and omitted the green pepper. I also used a Mexican blend cheese and my family loved it! My husband took leftovers to work with him the next day and said they tasted even better when re-heated! This one is definately a keeper!

I love this and so does my family! Only I just lay out corn tortillas then add the chicken and sauce and then layer more tortilla's and add more sauce on top. I make it often!

My room mates loved this but I had to add some hot sauce and extra cheese so they would enjoy it more. They also said that I should have shredded the chicken but I though it was good as chunks.

After reading many reviews, I omitted the water. I used mild salsa instead of taco sauce, but ended up adding an extra 8 oz. can of tomato sauce to help cover it. Delicious!!

First time making & eating I found them a bit runny so next time like other readers I'll use less water,and use enchilada sauce instead of taco sauce and because some of my family members don't like green peppers I'll try the green chiles, with these few changes I'm sure this would be at least a 4 star.

I use a simplier recipe. boil 2 chicken breasts, and shread once cooked. Using one corn tortilla per enchilada, pan fry the tortilla (just very little) then dip into store bought enchilada sauce to cover. Place on plate and add shredded chicken, shredded cheese (your preference, I use Colby Jack) and olives. I then fold like a burrito and add more sauce on top with a little shredded cheese and a dab of sour cream. Easy and fast.

I grew up on TexMex and authentic Mexican food and this just did not cut it . I decided to prepare this dish because of the high ratings. I was very disappointed in it. I only managed to eat one bite and decided to opt out and go with a sandwich for dinner.

These were great. I did not add the water either but next time I will. I would have liked to pour the sauce it made over the Enchiladas rather then the taco sauce. Will make again!

The enchiladas were very tasty but the recipe was more time consuming than it said. Maybe it was just me, though. We didn't really like all the onion in it either even though I cut it down to half of what was called for. I will probably try to make this again without so much onion, and maybe let it simmer longer.

This was delicious especially as leftovers!! I used some of the suggestions other members had written in their reviews. I used roasted chicken from the grocery store and shredded it myself as well as replacing the chopped green pepper with chopped green chiles for extra flavor. In addition, I used the suggestions Patrick offered with all of the omissions and replacements. I am only giving this a 4 star because I was not the biggest fan of the chipotle salsa and I think a verde salsa would be better for the inside. I also think it would be better to use less salsa (possibly 12 oz) and more cheese.
