The enchiladas tasted pretty good, but the structure of the recipe made it difficult to follow. Only one step for all that assembly? Spread the beans on each tortilla first and then combine ingredients to make the chicken filling? No nutritional info. I used corn tortillas and added green chiles to the filling.

Super simple and quick way to use leftover chicken. Used half of a Costco Roasted chicken and with the suggestion of others added some cumin and chili powder. Both my husband and son went for a second serving so i know this recipe is a keeper. Definitely adding this into my dinner rotation.

Really good dish.. Used left over wild turkey… think any poultry or even pork might work. Used a homemade "Ten Minute Enchilada Sauce" from All Recipes since I didn't have any bottled. This casserole was much better as it sat for awhile.. Wait 15 minutes at least before serving for best results. Really enjoyed this.

This was really good. I did add green chilies to the chicken mixture and it added some great flavor. I also make my own enchiladas sauce, so much better and really easy to make. Great recipe, everyone loved it!

made essentially as stated with the exception of making my own creamed soup (MUCH healthier) and added extra spices-- garlic, cumin, etc. would DEFINITELY make again!!!

This was a great and quick meal! I also used all low-fat ingredients (cheese, sour cream, beans, soup) and used whole wheat tortillas. I added the chiles to the sour cream and it did add a needed kick! Used precooked chicken from the grocery store that had been soaked in Mexican spices, so that was an extra plus!! Great recipe!!

Delicious and easy! Next time I will add some taco seasoning as some others suggested. I used light sour cream and reduced fat soup, along with Mexican blend shredded cheese. Very, very yummy!

Absolutely delicious! My family loves it! I'm always looking for new recipes & this is one of the best I've come across on here, by far. You don't need to change a thing to this recipe if you just follow the directions to the tee.

This is now a family favorite!!!! The only thing I would do different is cut back a little on the chili powder. EXCELLENT!
