I think this recipe could use more enchilada sauce, and I might like black or pinto beans better. Otherwise, this was really, really yummy and I'd make it again. Thanks!

I liked the chopped lettuce on top of the enchiladas. It added a nice texture to the dish. Of course you can serve a side salad with the enchiladas, but this way you get the lettuce without the added fat and calories from the salad dressing! My favorite enchilada recipe from this site is still Chicken Enchiladas II. I’m glad I made this recipe though!

I would give this 6 stars if I could. We made a few simple changes, just for our preferences...used shredded chicken, light soup, low fat sour cream, cut cheese to 2 cups. Added 1 tsp cumin & chili powder to chicken. Awesome, this is a keeper. Presents well, I would serve this to company. Thanks for sharing!

Great recipe. This was my first time at making enchiladas and my family loved them! I added a half a pack of taco seasoning to the chicken and soup mixture. Can't wait to make again.

This recipe is wonderful! My family requests it all the time! The only thing I do different is I add green chilis from a can to the sour cream mixture and I also saute the chicken in taco seasoning to give it a little more flavor!

My husband and I are living in Australia for the year, and we've been craving good Mexican food!! I decided to give these enchiladas a try (since I could actually find ALL of the ingredients here - there are very limited choices for Mexican food!) and they were awesome! We LOVED them and completely got our Mexican fix! I added chopped jalapeno to the sour cream mixture and then added the green onion, lettuce and tomatoes to the top after they were done baking. This will become a staple for us - even when we get back to Texas!

I made this two nights in a row. The second attempt was much better. I had a whole lot of chicken mixture left over. I used white Mexican cheese and a LARGE can of enchilada sauce and it made all the difference. I also bought the 10 inch tortillas b/c the store didn't have any smaller ones. I have a family of four and I had enough chicken mix to make 20 enchiladas. I boiled a whole chicken. I will be making this again

We really loved the flavor and my 2 year couldn't get it in his mouth fast enough. 4 stars because it was soupy. Next time I will only use half of the soup and sour cream. I accidently used cream of mushroom and it still tasted great.

Really enjoyed this- very moist! I did substitute plain yogurt for the sour cream, did not add onions or lettuce, and used a 19 oz. can of Enchilada sauce.

Pretty good. The soup/sour cream mix ended up being a bit too much so I might reduce next time. I added a can of green chiles to the chicken mix. Overall very yummy, I might also try it with verde sauce next time.

Wonderful Mexican comfort food. I don't review if I change the recipe, followed recipe to the letter, did convert to 4 servings. The only thing I will say is recipe didn't state degree of enchillada sauce, I used medium, great for my family, but might be too "hot" for some or small children. WONDERFUL RECIPE.....

Super easy and delicious. I like to use black beans instead of pinto beans and corn tortillas in place of flour. I also layer the tortillas to make a casserole. Very fast!

I think these are so easy and so good! They have become one of my favorite things to make. My family prefers chicken to beef just about any day but they get tired of the same old casseroles. Thank goodness I ran across this recipe, LOVE IT!!
