2 small onions, chopped
1 pound fresh mushrooms
8 skinless, boneless chicken breast halves
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon paprika
2 teaspoons chopped fresh chives
2 teaspoons dried parsley
1/2 cup chicken broth
1/4 cup brandy
2 tablespoons prepared Dijon-style mustard

DIRECTIONS
Saute onions and mushrooms in a large skillet over medium heat. Remove onion/mushroom mixture from skillet and reserve; add chicken breasts to skillet. Saute for 4 minutes, then turn over and add mushroom mixture on top.
In a small bowl mix salt, pepper, paprika, chives and parsley together then sprinkle mixture over chicken. In a medium bowl combine the broth, brandy and mustard and blend together. Pour over chicken, reduce heat to low and simmer for 20 to 25 minutes or until chicken is cooked through (no longer pink inside).

Yummm!! This was really good...I didn't have any brandy on hand, so I substituted with apple juice and it came out great! I served over egg noodles, will definitely be making this one again!! Thanks Joan!

I've made this recipe twice already. It's easy to make and a great crowd pleaser. The second time I was going to make it I just said "Hey guys I'm going to make the Chicken Diane Style again, what do you think?" It was a resounding yes. It's awesome. I don't like chicken that much but this was awesome.

I liked this very much, although when I went to put the dijon mustard in I found I didn't have any, so i put in wholegrain mustard instead. It worked very well, so tasty.

My family rated this one--a 3.5. (Three teen boys and one Asian husband).I'm not sure why...just not their favorite. It was moist enough, tasty..just a 3.5. (For my taste, I'd use less pepper next time).

I was sooo looking forward to this and I dont know what happened - I was quite disappointed. I followed directions exactly. Sauce was very bland. I sprinkled spices on top as directions say, but I think they perhaps should be stirred into sauce. My husband said "put on the don't have to make again list". My son said "it tastes like boiled chicken". Too many other good recipes here, most likely wont try again.
