These aren't bad. My cucumbers were extremely long, which made them hard to fit on a plate or lay smoothly, so I cut them in half. I prepared the chicken salad the night before, and just prepared the cucumbers and put in the chicken right before dinner. I served on a bed of lettuce, and it was pretty good. Bf really liked them. I'm not sure about the chicken salad; it's not the best I've had. However, I think it is a great idea and I want to make this for bf's parents. I think they'll love them, as they are carb counting and trying to eat more fresh veggies.

My hubby and I thought this recipe was good. A healthy meal is important. I used light mayo, and light mozzerella cheese. I cooked the chicken two hours before, and seasoned them with salt and pepper. I shredded the chicken instead of cubing it. I thought refridgerating it for too long might make it soggy, so that's why I cooked the chicken, and waited until dinner time to prepare everything. This meal didn't require a fork, just pick it up with your hands and eat! Yummy!
