INGREDIENTS
1/2 cup chopped celery
1/4 cup chopped onion
2 tablespoons chopped green pepper
2 tablespoons butter or margarine
2 cups cubed, cooked chicken
1 (4 ounce) can sliced mushrooms, drained
6 pimento-stuffed green olives, sliced
1 (10.75 ounce) can condensed cream of chicken soup, undiluted
1 cup milk
1 (8 ounce) package wide egg noodles, cooked and drained
TOPPING:
1/2 cup cornflake crumbs
1/4 cup shredded Cheddar cheese
2 tablespoons butter or margarine, melted

DIRECTIONS
In a skillet, saute celery, onion and green pepper in butter. Remove from the heat; add chicken, mushrooms, olives, soup, milk and noodles. Mix well. Spoon into a 2-qt. baking dish. Cover and bake at 325 degrees F for 25 minutes. Meanwhile, combine topping ingredients. Sprinkle topping around edges of casserole; return to the oven for 5 minutes or until the cheese is melted.

This is a wonderful recipe and very easy to make. I took this to our boat club party, and it was a hit, no leftovers at all. I added minced garlic fresh mushrooms, bread crumbs for topping since I did not have the cereal it suggested. I also increased the cooking time to 45 minutes. Thanks for the recipe, I will be adding this one to my recipe box.

This is a new family favorite for us! I now use it as my base chicken casserole recipe and sometimes tweak it for a little more drama. I recently decided to serve it to my in-laws and so I jazzed it up a bit. I added a can of Rotel tomatoes, 1 can of peas and used a cornflake & butter topping all over. I also added a bit more cheese mixed in and on top. Incredible...Enjoy!

This turned out really good for us. Though I'm trying to get away from the canned soups, I was in a pinch and decided to try this since we love recipes that incorporate olives. We did add extra cheese. Thanks for the post.

My husband and I absolutely LOVE this recipe! We have decided that the next time we make it we will make enough topping to cover the whole casserole, and probably bake it a little longer. Thanks so much for sharing this one. It's definitely a keeper!

This was good. I read that it was bland so I added a chopped jalepeno, and some garlic. Also, I used extra cheese on top and put the topping everywhere instead of just around the edges. I didn't care for the flavor of the green olives in this, but you could omit it. All in all, a good dish...picky hubby liked it! ;D
