I was looking for a salad recipe to go with broiled chicken and found this one. The recipe said it made 6 servings. I did 1/2 recipe and still got at least 6 servings or one large bowl! Unless you are feeding more than 6 people I would only do half as half the recipe is uses one whole loaf of homemade bread or 4 slices of bread per person alone! There is no temperature directions for the bread broiling part. I would broil on "low" for a couple of minutes or so flipping once. I put it on high like I do broiled meats and lost a few pieces after 1 1/2 minutes! I was serving this with the chicken so I left that out. I didn't use the pepper, because I don't care for it. I thought the recipe called for red wine vinegar, so that is what I used. It is stronger than balsamic so I used 1/4 cup for half the recipe. I also thought the recipe called for dried basil but it was for fresh. I am not a big fan of basil anyway, so I just sprinkled a couple tsp. of dried parsley on the salad for personal preference. The down side to this salad is not so much the taste it is that after about 30 minutes the bread starts turning to complete mush! So, the texture gets very odd. I followed the direction just changing the herb and the flavor or vinegar. Someone even asked me if I was making stuffing as a side dish!

I changed this up a bit. I seasoned the bread first with garlic seasoning. I didn't have leftover chicken so I grilled a couple of seasoned breast real quick. Zucchini instead of cucumber and chick peas, instead of the great northern beans. I added fresh basil from my garden and some marinated artichoke hearts. OMG YUMM-EE!!!

I made this recipe without the bread. It was very good, I'm sure it is probably just as good with the bread.
