"Something I put together after the inspiration of my daughter's 'Pita Pizza.' She liked this one a lot and wanted me to submit it! It's tasty so you might want to make more than one for yourself! This recipe makes about 4 pitas."

olive oil, divided
small frozen chicken tenders, thawed and sliced
garlic salt, or to taste
pita bread rounds
prepared Alfredo sauce
fresh spinach leaves, chopped
1 (6.5 ounce) jar
marinated artichoke hearts, drained and chopped
crumbled feta cheese
shredded mozzarella cheese
shredded Parmesan cheese
sliced fresh mushrooms
I made this with whole wheat pita bread no meat and added greek olives and 2 T diced red onion with all the other ingredients mentioned in the recipe and I was amazed how great it turned out! I am making this recipe again and again so versatile... a keeper!
I used Purdue breaded chicken (precooked), sun dried tomato hummus with artichoke, basil Alfredo sauce recipes (both from allrecipes.com) and Italian blend cheese. Altogether (except for earlier recipe preps), I saved a lot of time. I also used precut/washed baby bello mushrooms and skipped the olive oil altogether. I did use feta and put all on small pitas. Sooooo gooood!
Made as written, but used diced cooked chicken breast and it was wonderful. Very rich and filling.
The only changes made were I used a 12" thin pizza crust, and no mushrooms, because my husband doesn't like them.
We loved it. he ate 5 slices , I had to fight to get 3.
I was worried about layering all the hummus, pesto and alfredo, but found very thin layers worked well. will make again
