Chicken Alfredo

INGREDIENTS
1 (8 ounce) package cream cheese, cubed
6 tablespoons butter or margarine
1/2 cup milk
1/2 teaspoon garlic powder
salt and pepper to taste
2 skinless boneless chicken breast halves, cooked and cubed
2 cups frozen chopped broccoli, thawed
2 small zucchini, julienned
1/2 cup julienned sweet red pepper
6 ounces fettuccine, cooked, drained

DIRECTIONS
In a skillet over low heat, melt cream cheese and butter; stir until smooth. Add milk, garlic powder, salt and pepper. Cook and stir for 3 minutes or until thickened. Add chicken, broccoli, zucchini and red pepper. Cook over medium heat for 3 minutes. Reduce heat; cover and cook 5 minutes longer or until vegetables are tender. Serve over fettuccine.

A great main course . But a little bland. I minced couple of cloves of garlic then slightley cooked it in about 1 t spoon of olive oil then added it to the cream, veggies & chicken . I also added 1/2 cup of sour cream and a pinch of parsley, basil & oregano. We cook with spice. 4 Stars a good dish but don't pass on the spice please. Served with Toasted Baguette brushed with butter or olive oil, Salad & Imported beer or fine wine. Thank You John

Really yummy sauce. I think you had better serve this dish right away, because it didn't take long for the sauce the get clumpy. I only used broccoli... no pepper or zucchini. The leftovers are good, but it is hard to get the sauce to be smooth again.

Absolutely loved it! For such a simple recipe, I was surprised by the taste. I prefer marinating and grilling the chicken before tossing it in with the pasta and veggies for a truly delightful flavor. Have made this three times and it's a new family favorite.

The cream cheese was way too overpowering in this recipe. I had to add a lot of garlic, Italian seasoning and more milk to make this taste better. Thanks for sharing though.

pretty good, could be a little bit better. my husband thought it tasted too much like cream cheese and I had to agree a little bit. I added bell peppers to it and didnt use any of the other veggies listed. will give this one another try

My family LOVES this recipe. Even my picky 13 yo enjoys it. I altered the recipe to use about 1.5 cups of 2% milk (we like a thinner sauce--stretches the leftovers, too), 3 chicken breasts, 1 tsp. of garlic powder and a few dashes of ground red pepper for a little zip. YUMMY!
