Delicious cookies, I use only about 1/3 cup of molasses, and extra ginger. These are best day-old or frozen! for extra zing, I substitue water with orange juice and plenty of orange zest, a great combination with the ginger.

I really wanted to like these because I LOVE ginger, but these were just terrible! I usually use blackstrap molasses, so that might have been some of the problem, but they were so overpowering and tasted only of molasses, no ginger at all. They looked like blobs of hamburger when cooked, so much so my kids came in and asked what if I was making weird smelling meatballs! Also, the quantity listed is way off. I almost didn't make them because I thought it would be a waste of time for so few cookies. I made regular sized cookies and got almost 3 dozen. Sorry, but these should be called Molasses cookies instead - there really is no ginger taste at all.
