Chewy Ginger Drop Cookies

Ingredients

  • 1/2 cup shortening
  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup molasses
  • 1/4 cup water
  • Additional sugar

Directions

  1. In a mixing bowl, cream shortening and sugar. Combine flour, baking soda, ginger and salt. Combine molasses and water. Add dry ingredients to the creamed mixture alternately with molasses mixture.
  2. Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Sprinkle with sugar. Bake at 350 degrees F for 13-15 minutes or until edges are set. Remove to wire racks to cool.

Delicious cookies, I use only about 1/3 cup of molasses, and extra ginger. These are best... MORE
