My husband & I both loved these! I have to admit to changing it up just a bit. I decreased the white sugar by 1/4 cup, upped the vanilla to 1 tsp and, used 1 cup unbleached wheat flour & 1 3/4 cup white flour, and 1/3 cup finely chopped pecans.

Oh my goodness!!! These are so awesome! I used 2 teaspoons of mexican vanilla and baked the cookies in my convectionate oven.

This cookie was so easy to make...The only change I made was increased the vanilla to 1 teaspoon. I like my cookies chewy so i only baked for 10 minutes, right until they start to brown. I recommend making a double batch, this only made 30 cookies for me. Also if you shape in a ball they will come out round

What a fantastic recipe, just the right balance of chewy and crisp. I drizzled some of the cookies with milk chocolate and they were delightful. Next time I might try adding some chopped macadamia nuts and perhaps white chocolate. Even with just the plain coconut cookies they are to die for.

I was so glad to find a recipe that could use up some leftover coconut I had in my cupboard, and was even happier that it was a GOOD recipe! I took other reviewer's advice and used 1 teaspoon vanilla instead of a 1/2, and although the cookies are sweet, we loved them. Thank you for this recipe!

Delicious & so chewy! I think I'll try coconut extract next time just to see if it enhances the coconut flavor, but these are wonderful just they way they are.

Had to bake 2 batches of these this past Christmas. I'm not a big coconut fan and I found these to be scrumptious. Everyone loved them. I expected them to flatten out, but they stayed pretty plump in shape, probably because I chilled the batter a bit before dropping onto cookie sheet. Thanks for a delicious recipe.

I followed the recipe exactly & they were wonderful!!! Light & crispy on the outside & chewy on the inside. I added some milk chocolate chips to the last batch & those are just as good!! I will definitely make these again & again!

awesome, we loved these. i used my pampered chef medium scoop though and only got 18 cookies. only thing i did different was add a full tsp of vanilla. will definetely make these on a regular basis. thanks for the post!!

I didn't bake them-I ate them! These cookies are the number 2 cookies my wife has ever made-second only to her chocolate chip cookies. If you want a cookie that your family will devour within a day-try these!! We had them with white chips and some with regular chips-both delicious in their own way. The Mrs. wants to add coconut extract for more coconut flavor. These are not for a family that is interested in staying slim.
