I've made these several times and everyone loves them. They're like a sugar cookie with a little more going on ;) The coconut doesn't bring out too much flavor, so I suppose coconut extract would help although I'm fine without it.

These cookies are so good! They almost taste like oatmeal for some reason. They're really chewy and coconutty, and you can't eat just one. I sent some in to work with my husband, and his coworkers devoured them. I'll definitely be making these again!

These are wonderful cookies...sort of a cross between a chewy macaroon and a regular cookie. I must admit that I put the recipe together first thing in the morning when I was half asleep and later realized I had only put in 1 cube of butter (1/2 cup) instead of one full cup. Well..serendipity..I will always make them this way in the future, they were fantastic. Before baking I rolled them in walnut size balls then dipped the top of the ball in a little shredded coconut..which slightly toasted while baking, looked nice and people at church knew what they were getting inside. I will be adding these to my Christmas cookie plates.

Awesome cookies! (if you love coconut) The only thing I changed was adding a little bit more vanilla extract, and adding a splash of coconut extract. These were yummy cookies, I will definately make them again! Thanks for the great recipe. :D *****Update: made these today; pressed my thumb in the middle of them and put raspberry jam in it before baking! Kind of gooey on the bottom of the cookies, but sooooooooooo good!! Try it, just don't put too much jam or it doesn't bake that well.*****

Great Recipe! Easy to make and was/is a hit at work. I added a little more coconut and vanilla extract than the recipe called for, but that is just my preference.

I've made these twice; the first time exactly as stated in the recipe. The second time, I used coconut extract and more coconut flakes. EXCELLENT for those of us who require more pop in the chops. Thanks for sharing this recipe!

the cookies were OK following the recipe exactly. they're a little plain. however i did a side batch with extra sugar and chocolate chips and those were awesome! also the serving size is way off. my recipe yielded about half the amount, i like regular size cookies. if i did teeny-tiny ones, maybe i would have had 36 as says. easy & good recipe nonetheless. lots of room for experimentation!

Made these as written. They were gone within a few hours. The whole family just loved them. I used fresh coconut (the joy of living in Florida!). These were really good and definitely chewy.

**********10 Stars, the only thing I did different, was added a tsp of vanilla, they just seemed a bit dry when I was mixing them, although they would probably have been fine.

with a few adjustments..these cookies were perfect!! i added a whole teaspoon of baking soda, because i wanted them to rise a little more. also, i added only about 2 tablespoons of white sugar, because i was going to use sweetened coconut. then i drizzled with some chocolate...perfect!! they were gone in less than an hour!!

These rock!!! I am usually a chocolate person, but I can't get enough of these. The last time that I made them, I turned them into ice-cream sandwiches to take to a potluck at work. Vanilla ice cream in the middle, and I rolled the edges in toasted coconut. They were easy to make and tasted fantastic. I love this recipe.

Excellent chewy cookie! I doubled the recipe as it only makes a dozen as is. Doubling the recipe gave me 27 medium-sized cookies and I also added one cup of chopped pecans. Highly recommend this one!

These cookies are awesome, they are rich, buttery and sweet yet not too sweet, i made them exactly as written and they turned out perfectly, the dough was not crumbly at all but nice and moist, i will totally make these a staple cookie to make all the time, cant wait to eat another one.

These are dangerously good. I tried another reviewer's suggestion to add white chips and that was good too, but I think I liked them better without.
