Seriously, these are some of the best cookies I have ever had - the perfect balance between sweetness and buttery flavor, crispy edges and chewy centers. They are also ridiculously easy to make. They look beautiful and are perfectly round with minimal effort. I brought them to a party and they were a huge hit. Will make these again and again!

I love the combination of chocolate and coconut...but these don't need the chocolate at all! Make these as is and you won't be disappointed. The longer you cook them the crispier they are. As soon as they start to lose their "wet" look, I pull them out and they are great!

Couldn't quit eating these..and I'm not even a big fan of coconut! Soft and chewy. Great recipe as is, but might try adding mini choc chips next time.

These were good cookies, but just not 5 star cookies. I think next time I might try dipping them in chocolate, that might make it a 5 star cookie.

This cookie is good. It has a wonderful texture and crumb after baking 11 minutes and cooling completely. It's just the right crunchy/chewy mix. The flavor is somewhat bland for our tastes however. I'm wondering if some spices/cinnamon would do the trick? Maybe even a tad more salt? The reviewer who suggested coconut flavoring may have a good idea also. Overall, a good cookie =)

The coconut was not overpowering, so these were really a tasty cookie. Soft and chewy and so very easy to make. I made them as is and they were delicious.

I heart these cookies!! I added 3 tablespoons coconut milk, 1 tablespoon rum and increased the flour by 1/4 cup! YUM

these are chewy, crispy and simply said ---they are delicous cookies!! I will make again, as I really love coconut cookies and these fit the ticket! I chilled the dough for about 20 min. and I baked them for 11 min and left on the pan 2 min to cool and then removed to a wire rack to cool. I dipped half of cookie in dark choc - yummy! I only got 33 cookies from this recipe.

WOW! These are the best darn cookies I have ever had! They are chewy, coconut-y, and GREAT! I made the recipe just as directed, except without vanilla because I was out. If you like coconut and chewy cookies, you will love these! Mine took about 13-15 minutes and made 23 cookies. Thanks for a great recipe. :)

I added a cup of chopped nuts but otherwise followed the recipe. It took about 15 minutes in my oven. Good Cookies. Will try without the nuts next time.

made it as is without any changes and it was really great. Chewy and crisp after about 11 minutes in my oven. I doubled the batch and added white choc chips to half but both w/ and w/o are moist and just plain good.

Delicious, chewy cookie. I used a large scoop, so one batch made only 13 large cookies, and baked for 15 minutes. Followed recipe exactly otherwise.

These were hit and miss. They didn't disappear as quickly as other types of cookies, but they had a nice consistency and a mild taste. Probably wouldn't make them again unless I had coconut on hand.

I LOVED this recipe! It's tastes a lot like a chocolate chip cookie (and I think for the most part that's what the recipe is based on) with coconut. My boys and nephews loved these and my 7 year old who hates coconut, loves these! Next time I will dip them in milk chocolate as another person suggested. Thanks for an awesome recipe!
