These cookies were really flavourful and 'coconutty.' I put the batter in the fridge for an hour or two and then rolled them out into balls. However, I was a bit to cautious and didn't push them down as thin as I would like - I found the cookies hardly spread out at all. Next time I will either decrease the amount of refrigeration time or take the liberty of pressing them down a little harder. I also didn't find the cookies browned as nicely in the oven whereas the bottoms were already quite brown, but I believe this again had to do with the thicker, denser cookies. I will definitely make this again with above alterations, as my family really enjoyed them.

I made these cookies exactly as the recipe states the first time and they were very good but I made a second batch and increased the vanilla to 1tsp. and coconut to 2 cups - perfect! Everyone loves them.

An AWESOME chewy coconut cookie! I pulse my coconut in the food processor for a few seconds first. I doubled the vanilla to 1 tsp, and sprinkled chopped pecans on top of the cookie before baking. My big cookie scoop only gave me 20 cookies. Baked at 13 min. total. PERFECT! also *Self rising flour works great/ omit the salt & baking soda*

I just made the cookies and all I can say is OMG !!! They are so good, I used sweetened coconut and 1 less tablespoon sugar. I got 36 cookies, and the last dozen I added 1/4 cup cranraisins, 1/4 tsp. orange zest and 1/4 tsp. orange extract. I now HAVE to make another batch all with cranraisins (cranberries) and the extract and zest, these may be the best tasting cookies I have ever made.

Very yummy! I left out the white sugar, since I used sweetened coconut (couldn't find unsweetened). I also used coconut extract instead of vanilla. Came out nice and chewy with a great coconut flavor.

We had a whole fresh coconut to use so we grated it up and made these cookies. Wow, what a great recipe! The cookies were chewy, sweet and perfect with a glass of milk. Next time I think I will try them with some orange zest or chocolate chips added!

Great cookies. Recipe didn't specify what kind of flaked coconut, and sweetened is what I had on hand so that's what I used. I may try a little less sugar next time. I did add extra vanilla as well. My cookies are a always a little larger than they're supposed to be but I still got 21 out of the recipe though they definitely needed an extra 3 or so minutes in the oven. I also mixed all ingredients in one bowl after creaming the wet ingredients to save on dishes :) No issues with rising. Still great texture and moistness and I used low fat Becel instead of butter.

I made these after finally caving into a long festering urge to bake cookies...lol:) Well, I followed the recipe exactly as is except for the vanilla and I thought about giving these a 4, but these are more a 3... they were too crispy, didn't rise enough, too sweet, and too buttery all at once. I still liked them a lot because I love coconut, but it wasn't quite this perfect coconut cookie that I was trying to recreate. Next time, I would add another 1/4th a cup of flour, make sure to roll them in balls and put in fridge for a while before baking, reduce butter by a couple of TB, reduce sugar to 3/4th a cup, and add some semisweet chocolate chips. That would be great:)

Yummyyy..... I halved the recipe and made some to taste it beforehand. Wow. they were absolutely great. Hoping to make these for christmas. I had to bake it a litle bit more than 10 minuts to get them better. Thanks again.
