Love these cookies, great tasting and last for days if you can hide them from family and friends! I took other reviewers suggestions and toasted the coconut as well as add 1 full tsp of vanilla. After making several batches I puchased coconut extract and add 1/4 tsp....what a huge difference in the taste. For the top of the cookies I either sprinkle sanding sugar before baking or drizzle with melted chocolate when cookies are cool. ( taste like a Mounds bar ) Also made a batch with walnuts, raisins and chocolate chips which were very good. These cookies will be in my Christmas baskets for sure.

Fabulous cookie. Did have to bake them a bit longer approx. 12 minutes. I added some leftover butterscotch chips I had and it improved an already delicious cookie. Will be keeping this one.

This is a great recipe. I had this make in China, Chinese people doesn't really like to eat a lot of sweet food even that my mum ate 3 in a roll. That's pretty surprised. I used half cane sugar and half brown sugar for it, it turned out the sweetness is just right. Thank you!

The reviews made me give this a try. They were super easy to make. I used unsweetened coconut since it didn't specify. Hubby liked them. I thought they were just OK, but I'm not a coconut person.

Yum! I got 36 cute little chewy cookies and followed the recipe closely (except for adding a cup of butterscotch chips). My boyfriend isn't a big coconut fan, but he definitely put lots of these little guys away. Very good cookie.

My husband and I enjoyed these cookies very much. He isn't a fan of macaroons but he loved these! I agree with a fellow reviewer that an 11-13 minute baking time is best.

These are very tasty cookies and have a nice light flavor and texture that is nice. I added just a touch more coconut about 1/4 cup..just a personal preference. They are moist and delicious!

These are the new favorite cookies at our house. I used 2 cups of coconut and replaced the vanilla with coconut extract. The only problem is that the recipe doesn't make enough cookies! Next time I'll double it.

These cookies were absolutely delicious. My Family really liked them.The only changes I made was to add about 2 1/2 Tbsp of Coconut Coffee Creamer. The Coconut Creamer really added a good flavor to the cookies.I will surely be making these cookies again very soon.

I made this recipe exactly as it said, but doubled it and almost doubled the vanilla (I love a little extra vanilla in just about everything). The dough looked a little too runny, but it turned out great. Flatten a little, when you put the dough on the sheet and they won't be puffy. I think this is one of the best cookies I've ever tasted. If you don't like coconut, you will still love these, mine barely tasted like coconut, but had a wonderful texture and the smell was brilliant.
