Tried this recipe twice. Didn't make any changes and both times the cake was very dry and heavy. Not sure why?

I used to love a recipe much like this that was in my mother's cookbook, but after trying this one, I think I'm stuck on it! The thing I like about these is how versitle they are! I have filled these little cakes with peach, organic apple, and cherry pie filling, and am sure other fillings would work too, though I would not recommend pumpkin because this isn't really a spice cake recipe that would do well with pumpkin flavoring. Also, the recipe in my mother's cookbook calls for a crumb topping to sprinkle over the cakes and I think this recipe would benifit from that too! Thank you soooo much for sharing!!
