1 (6 ounce) package cherry gelatin
1 1/2 cups boiling water
1 (21 ounce) can cherry pie filling
1 1/4 cups lemon-lime soda, chilled
whipped topping

DIRECTIONS
In a bowl, dissolve gelatin in water. Stir in pie filling; mix well. Slowly stir in soda (mixture will foam). Pour into an 8-in. square dish. Cover and refrigerate until firm. Cut into squares. Garnish with whipped topping if desired.

I love this recipe! My kids request it and it's perfect for potlucks. I have changed the water to 1-1/4 C. and the soda to 1-1/2 C. simply to use up the whole can of soda. I also double the recipe and leave it in a bowl to serve a larger group. It also lends well for variations: strawberry jello and pie filling, raspberry jello and pie filling, berry blue jello and blackberry pie filling. I haven't varied the flavor of soda, but plan to try that sometime.

I have to revise my rating. My kids absolutely love this, and have asked me to make it again. The day after I wrote the review, we had the leftovers of it with dinner and we all liked it much better. So, I guess I will be making it again after all! :-)
