Tasty! I do feel it needs a bit of salt and pepper, or a drizzle of evoo or basalmic vinegar to 'brighten' up the flavors a bit. I just added the salt and pepper, and that was fine for us. We liked the addition of the black olives, making it different from the usual caprese salad. I would make this again, b/c we love these types of salads! Thanks for sharing. :)
I did not like this, but am not sure it's the recipe's fault. I don't think I got the best-quality olives or tomatoes. I did feel like the proportions were off (needed less cheese and more tomatoes, in my opinion), but it's probably just a measure of personal taste. I would have liked it more as a Greek salad (with the addition of cucumbers, and a replacement of feta for the mozzarella).
