Brine:
1 1/2 cups boiling water
3/4 cup packed brown sugar
1/2 cup kosher salt
1 tablespoon kosher salt
1 teaspoon finely ground black pepper
1 teaspoon ground allspice
1/2 teaspoon ground cloves
1 bay leaf
2 cups chopped celery
1/2 yellow onion, chopped
3 cloves garlic, peeled
2 cups water
1 quart water, or as needed
4 (1 1/2 inches thick) boneless center-cut pork loin chops
Glaze:
1/4 cup packed brown sugar
2 tablespoons Dijon mustard
1 pinch cayenne pepper, or more to taste
1 tablespoon vegetable oil
12 whole cloves
These turned out very well. Not the same boring ham one would traditionally have. I did add the 2 tsp of liquid smoke as the video showed. This made the taste much better. One more thing to not is make sure to stir or rotate the chops every night so that they coat evenly in the brine.
