This was so good! I used olive oil to get the spices to stick and added the mozzarella 5min before it was done so it would get a liitle brown on top. WILL be making this again.

I made this recipe the other night. I loaded up on the spices because I love spices. After tasting it I thought it needed a little something too. I ended up using some salt and pepper. I really think that was all it needed. I would have prefered to mix in the salt and pepper with the spices so the flavor would have been throughout the squash and Zucchini. I would make this again.

I changed this recipe quite a bit, so maybe I shouldn't be reviewing it, but I think I pretty much stayed true to it's intention. I only used Parmesan cheese, and I used lots of sea salt and pepper and oregano, as well as seasoned bread crumbs to spice it up a bit. Because I didn't use much cheese it didn't stay together at all (maybe next time I'll add a beaten egg?), but it was still very tasty, and a great way to use up these late summer vegetables I have around. All in all, a healthy dish that I would make again.

We ate it but I don't think I'll make this again without modifications. It just seems to be missing something(lemon juice, butter or olive oil or something...maybe all three). I would even leave the cheese out completely or sprinkle with parmesean cheese and parsley. I'm not sure, but I think it needs tweaking!
