I did increase all the spices BUT the salt. This was a little confusing for me to figure out but I did end up pulling it off. We liked this but my husband and I thought that it would have been better without the pasta. Don't get me wrong, this was really good as is--the kids especially liked this. Next time, though, I would like to try this with another cup of carrots and omit the pasta completely. That would help me as I'm trying to watch my carb intake. It's just another option.

this was a hit at our house! i was lazy and used bagged veggies (didn't even julienne the carrots, just used baby carrots), used rice pasta and it was yummy!

I thought this was pretty good, but I had problems with the layers. Near the end of cooking, I had to mix everything together because the milk was not combining with the cheese. I also had to add a lot more salt. Next time I am going to make cheese dip out of the velveta (probaly with rotel) and pour/mix it with the veggies before I put it in the casserole dish. I am also going to saute the onions with garlic instead of steaming them (to give the dish more flavor) This has the potential to be an awesome recipe, I just could not get it to bake correctly as is. BUT My 3 year old ate it with the veggies, so it is definetly a keeper.

WOW. This recipe is deceptively AMAZING. I can't believe how good this is and yet so simple! Want to make it healthier? Use ww pasta, half the amount of cheese, fat-free half-and-half, and Smart Balance instead of butter. Still so good!!!! UPDATE: I've made this recipe many times now exactly as written (subbing only lower-fat ingredients) and it is really really good. Amazing actually. A favorite at our house.

I modified this recipe since I didn't have Velveeta, I increased the cheddar and mozzarella cheeses. I think I may have put a little too much elbow macaroni since when this came out of the oven it seemed a little dry. Will be careful with this when I make it the next time.

I loved this dinner, and my husband went back for more 3 times!! I did make a few changes; Didn't have cauliflower so just increased the broccoli and carrots, used egg noodles as that is what I had, and instead of bread crumbs I used crushed whole wheat Breton crackers. I also dotted some garlic butter on top, instead of just butter. I also added some cooked chicken pieces to make it a full meal. Next time I will just chop the carrots as julienned took to much time. This recipe is VERY yummy!
