INGREDIENTS
1/2 pound ground beef
1 large green pepper, diced
1/2 cup chopped onion
1 garlic clove, minced
2 cups cooked white rice
1 (10.75 ounce) can condensed tomato soup, undiluted
4 ounces processed cheese food (eg. Velveeta), cubed
1 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon pepper

DIRECTIONS
In a skillet, cook the beef, green pepper, onion and garlic over medium heat until meat is no longer pink; drain. Add the rice, soup, cheese, chili powder, salt and pepper. Cook until cheese is melted. Transfer to a 3-cup baking dish. cover and bake at 350 degrees F for 30-35 minutes.

Sorry - how can this "stand alone as a tasty meatless entree" when the main ingredient is beef? Gave it three stars because I had to change it to be meatless...
