I made this by the recipe (only substitute was 1 lb of pork sausage instead of the veggie patties) for a group pf friends. They thought it was very good and had seconds. The only change I might make next time would be to use 12 eggs instead of 8, since, by ratio, there seemed to be less egg and more other ingredients.

My family loves this recipe, even my super-picky 9 year old son. It's easy to prepare, filling, and healthy; we eat it for dinner with fruit and/or a salad.

This took a little longer than the 40 minutes that it stated. I had mine in for 50 minutes, then broiled it for 2 more minutes to ensure the top was cooked as that was the only thing that didn't look done. I ended up using real sausage because I couldn't find any veggie ones at the small grocery store I went to. If I made this again, I would leave out the salt--it didn't need it especially with the sausage. Plus, the cheese adds a lot of flavor.

Awesome recipe! We had this for supper last night. I skipped the green onions, and instead added a few dashes of onion powder. I also used fresh baby spinach, pepper jack and cheddar cheese and chopped the patties before tossing them in. Finally, try broiling this for the last 3-5 minutes for a nice crispy finish.
