Directions

  1. Heat 2 tablespoons dressing in large skillet on medium heat. Add onions; cook 5 minutes or until crisp-tender. Stir in eggplant, thyme and remaining dressing; cook 5 minutes, stirring occasionally.
  2. Add zucchini and peppers; cook 6 to 8 minutes or until tender. Stir in tomatoes. Bring just to boil. Top with cheese; cover. Cook 2 to 3 minutes or until melted.
