This is one of our favorite vegetarian soup recipes, serves with artisan bread from the local bakery and a fresh green salad. Very flavorful, although my husband and I tend to add a little extra heat via tabasco sauce. When I have it, I use my own frozen, home-roasted corn and when I don't, I use Trader Joe's roated corn. Either way--yummy!

I was concerned about the country gravy mix making this soup too rich. It turned out to be really good but I did add extra milk to thin it a bit. I would probably add more veggies next time I make it as well.

This was a delish soup. I served mine in bread bowls. My guests loved it. Although I would do something a little different with the broth. Maybe add a titch of half N half. Just seemed to be missing something rich and thick about it. Careful not to over cook your potatoes:)

This is really, very good (I'm enjoying some leftovers for lunch right now!). I made a few substitutions: olive oil instead of margarine, skin-on red potatoes (and added more than 3 c.), 1 c. milk + 1 c. half-and-half, added a can of creamed corn, and used shredded cheese at the end. It's quite tasty with a hunk of good bread - and topped with more cheese and some bacon bits!

Great flavor and easy to make. Only ingredient change I made was to add a can of creamed corn. One time I was short on time and didn't have time to wait for the potatoes to cook. After I sauted the onions and celery I put everything in a crock-pot (except the cheese) and cooking on low high for about 6 hours. I added the cheese during the last 20 minutes or so. Turned out great.

I liked this soup. It was easy and fast for a weeknite. Very filling also. I added 2 cups of cheese instead of one. I used Wondra instead of gravy mix.Would make again.

Good stuff and quite simple to make. I used vegetable broth to make it vegetarian. I had all the ingredients on hand except for the gravy mix so I did a quick search online and found one. Basically it was flour and a few spices but it worked just fine. I used a mail scale to get the measurement but I'm sure that you could go with about 3-4 tablespoons and up the amount as needed to thicken. Great recipe and easy to modify to suit tastes or available ingredients!

A good chowder for a cold rainy evening. I took the basic recipe and made a few changes per family preference. I cooked 8 slices of bacon, drained, chopped and set aside. In the bacon drippings I sauted the onion, celery, 2 cloves garlic, 6 sprigs fresh thyme and about 4 small basil leaves chopped. I cut the kernels from 6 ears of fresh, frozen, corn (from the summer) and diced 6 medium sized potatoes. To a large sauce pan I transfered the celery/onion mixture, added about 4 cups chicken broth and brought to a boil. After reducing the heat I added 1 cup heavy cream, 1 cup 1/2 & 1/2, potatoes and corn and cooked, till the potatoes were soft, about 8-10 minutes. I then put about 2-3 cups of the potato/corn mixture in a blender and blended till smooth and creamy. I added this back to the sauce pan with the remainder of the chowder. The blended corn and potatoes gave the chowder a thick rich consistency (I did not use the gravy packet). I added about 1/4 cup of chopped fresh parsley just prior to ladleing into individual bowls. This was served with shredded sharp cheddar, chopped bacon and scallions, sour cream (each to be added per taste) and fresh baked sour dough bread.

Cheese and potatoes--there was little chance that I wouldn't like this recipe! But, I found it to be just the right amount of thickness and just a good, solid winter soup. The recipe as it stands makes a *lot* of soup, so I froze some and hope that it will still be good after that.

Oh my gosh this is so good! I thought the combination of chilies and gravy mix would be odd. Oh but to the contrary!! Everyone in my house gives this one a big 5 stars. It was exactly what I was looking for, tastes just like (maybe better) than the corn chowder from the sandwich shop.

This is really a five star recipe. The only simple changes I made was that I left out the chiles because it is not something I normally have and I added a tablespoon or two of Grey Poupon dijon which I add to all of my creamy soups. I also steamed my corn rather that using canned corn. Fantastic!

Delicious, fast, and budget-friendly! Even my kids ate it. I made a few changes- I used 2 cans of potatoes,instead of fresh, which cut the cooking time down by 18 minutes, and I used 2 cups of cheese instead of one.
