I modified this to make 2 main-dish servings. I used 2 Tbs. butter, 3/4 cup of each chopped onions and celery, 1 cup low salt Swanson chicken broth, 1/2 cup water, 10 oz. (after peeling) russet potatoes, 7 slices (5 oz.) Kraft American Cheese Singles, 1 Tbs. flour, 6 oz. milk, and 2 tsp. fresh parsley. Did add some bottled hot red chile sauce. ABSOLUTELY DELICIOUS, esp. when served with a green salad and fresh bread.
