Cheesy Hash Brown Bake

"This recipe was so popular at the morning meetings of our Mothers of Preschoolers group that we published it in our newsletter. INGREDIENTS

  • 1 (30 ounce) package frozen shredded hash brown potatoes, thawed
  • 2 (10.75 ounce) cans condensed cream of potato soup, undiluted
  • 2 cups sour cream
  • 2 cups shredded Cheddar cheese, divided
  • 1 cup grated Parmesan cheese

DIRECTIONS

  1. In a bowl, combine the potatoes, soup, sour cream, 1-3/4 cups of cheddar cheese and Parmesan cheese. Transfer to a greased 3-qt. baking dish. Sprinkle with remaining cheddar cheese. Bake, uncovered, at 350 degrees F for 40-45 minutes or until bubbly and cheese is melted. Let stand for 5 minutes before serving.

This was a good recipe. The whole family loved it! I did change the soups, I put in one can of cream of potato and one can of cream of celery. I also only added 1 cup of sour cream. I added one finely diced onion. It was very good! Very cheesy and yummy! Great comfort food! Next time I will add ham or sausage and make it for breakfast! Thanks!!

For additional flavor, I use one can of cream of potato soup and one can of cream of celery, plus a chopped onion in the mixture. It is delicious every time.

I loved this dish. It was like a loaded bake potato. At the party it was gone before everyone was even at the house. My husband wants me to make it tomorrow at dinner. Since it is a new recipe I will make it again but it probably isn't the most healty dish but like other reviewers suggested there are ways to make it less bad for you. I will make this many more times for sure.
