Everyone loved this - I made it exactly as stated. You could eat this anytime of the day: as a hearty breakfast - or as the main course at a casual dinner. Don't sub the potato soup for another kind of soup - I think that is what makes it!

Tasty! I didn't end up having cream of potato soup, so I made due with 1 can cream of celery and 1 can cheddar soup. I will certainly be making this again and will try it as written. I did also double the ham since it was being served as supper.

I probably wouldn't make this one again. i followed the recipe almost exactly - just added some sauteed onions and green peppers and left out the ham. It was ok but definitely nothing special. I think the cooking time needs to be upped - I baked mine for an hour as suggested and my hash browns didn't taste cooked all the way through. Also, I love sour cream, but this recipe really had too much. It was all I could taste!

Wow, I was surprised to find out how much food this recipe made. It lasted SEVERAL meals. We used some diced up ham from the deli counter. It would also be good with any other breakfast meat (sausage, bacon). I put a little less sour cream and cheese than called for. My husband accidentally got only 1 can of cream of potato soup, so I used one can of that, and one can of cream of mushroom soup, and it was perfect. Next time I would make the whole recipe but split it into 2 dishes.

we loved this, I used cream of chicken soup and only 1 cup of sour cream. I also sprinkled the top with italian breadcrumbs to make a yummy crust.

So easy! I made a half recipe and omitted the ham for a holiday meeting at work. The caserole dish was empty and there were only five of us! It tastes just like the hash brown casserole you get at a certain big chain country restaurant. Definitely a repeat dish!

I have made this casserole in the past, minus the ham. I tried this over the weekend with the ham and it was good. My husband wasn't a huge fan but my 2 year old and I enjoyed it.

I took this to a potluck, left out the ham, used the O'Brien potatoes and followed this recipe to a T. I think it does taste like something out of a box. It tasted really heavy/thick. It may taste better with just one can of soup? Also, if I were to make this again I would add cornflakes to the top since I'm not too keen on it's presentation in a casserole dish. I'm giving 5 stars since everyone nearly cleaned the dish empty and had a few compliments on how it tasted.

I just made this for a church breakfast and was really disappointed with it as was my husband. I added 1 cup of chopped onion and 1 cup of chopped green pepper to the recipe. It really tasted more like something out of a box. Just didn't like the taste of it.

My family loves this dish. I will often make it ahead of time for them for dinner when I will be at work. Then my husband just pops it in the oven. I usually throw in some frozen green beans or green onions.

This is so good! I asked my hubby how he liked it, and all he said (with a mouthful of food) was "love it." I used sausage, as we are not huge fans of ham.
