So yummy! I can definitely see how you could make additions and it would be even better. I only used 8 oz sour cream. Mine wasn't soupy but creamy enough. Everyone mentioned it as a breakfast casserole but I made it for dinner.

This is comfort food at its best! I love to make this when we have company over, its so easy to throw together. I double up on the hash browns & ham, and use 1 can cream of celery and 1 can cream of potato. I also like to add about 1/2 onion finely chopped. The casserole freezes nicely as well.

I made this recipe tonight. I had some leftover ham and didn't want it to go to waste. I found this recipe and it was a hit. No leftovers after an hour. Mind you, I have two teenagers and a few of their friends. Everyone loved this. I did use Cream of Mushroom instead of potato soup (it was what I had on hand), cut the sour cream down to 8 oz,used 4 cups of cheddar instead of parmasan cheese(again, what I had on hand). Next time I will follow the recipe to the letter and decide which I like best. Rave reviews from everyone at our house!

I added diced peppers, chopped onions and 2 cloves of garlic. Also topped with grated asiago cheese. Was very tasty but a bit too mushy for my liking. I think the next time that I make this I will brown up the hash browns first to toast up the dish. Reheates real well. Would be a 5 star if it was a bit more crunchy.

Love this recipe. It was the first time I've ever tried a casserole like this, and for the first time ever, my husband was excited to eat it over the next few days. I've made it 1 time exactly per the recipe, 3 times with tweaks, and the last one I made, the changes were perfect. This is a great base for getting things rolling and tweaking things around to suit your families tastes.

This turned out better then I thought. I used one bag of hash browns with onions and one bag of south western hash browns just to add some depth of flavor.

This was soooo easy and delicious. I made this Christmas morning and my family has asked to have it many times since. I did add some bell peppers and onions. I also added crushed corn flakes to the top for some added crunch. My mother would have liked mushrooms and some salt. Even without those it was still wonderful. This is a definite keeper!!!

My family LOVED this casserole. At first, I thought it might be too dry, but the hashbrowns cook down, and make quite a creamy sauce. If you have kids that don't like "weird" stuff in their food, this is the casserole for them. I recommend mixing the soup & sour cream separately from the rest, the adding in the cream mixture. It's alot to mix. My favorite part is the crunchy parmesan topping! My only modifications were to the cheeses. Didn't have enough sharp cheddar, so I made up the difference with whatever was in my fridge. Also, 1-1/2 cups of parmesan seemed like too much, so I used less. Turned out perfect!

I make a very similar casserole w/o ham but with leftover holiday ham, I decided to make this. I was tempted to use the cream of celery that I had on hand, but took another reviewers advice and went out for the cream of tator soup and am positive it make all the difference. My recipe w/o ham calls for cream of chix and with the cream of tator it was way creamier!!! SOOOOOOO good!! We're going to crack a few eggs over the leftovers in the morning!!

Pretty good, but maybe a little too creamy. I used some leftover ham, and also used hash browns with onions and peppers to give it some kick. Will definitely make this again.

This was amazing! Very delicious but next time I think I will put half sharp cheddar and half medium cheddar. There was a bit of a tangy taste from too much sharp cheddar but this was a winner.

The recipe is a little salty as is, but if you cut back on the cheese and add in some red bell pepper, mushrooms and onions, it's perfect!

I enjoyed this, but I'm giving it 5 stars for my husband's reaction. I made it for Christmas breakfast, and he had polished off the entire tray by the next afternoon. I didn't make any changes to the recipe. He has already asked me to make it again.

This dish was fantastic! I made it to go with eggs on Christmas morning and it was a huge hit. We ate the leftovers with dinner. The only change I made was to use half sharp white cheddar with regular cheddar. Adding more ham would make this a good winter entree. I will be using this recipe A LOT!
