This was good - very easy, very yummy and very comforting. I used the already thawed hashbrown, and added some pepper, garlic and dill to them before everything else. Very filling! Definitely for the very hungry.

All I can say is AWESOME this recipe came out wonderful. I used the hash brown potatoes that came with the chopped onions and peppers in it and did not use the parmesan cheese at all. I also diced the ham into very small pieces. I brought this to work and it was gone with in 45 minutes. Thank you for sharing this recipe.

This was yummy. I've been making a casserole very similar to this for years, minus the ham. Adding ham turns it from a side dish to a main dish, which is great! I served this with biscuits. Yummy!

I have never eaten better potatoes in my entire life. Really! I tweaked mine a bit to make it my own by adding some mushrooms, and lowering the Sour Cream to 8oz so that it wasnt too overwhelming. I also omitted the parmesan cheese and instead of ham we used Bacon flavored spam, which gave it a nice smokey flavor. But my gosh, this recipe is so amazing, my husband and I ate the whole mess of it in literally one day (breakfast, lunch and supper). I will definitely be making this again and again, and will be sharing your wonderful recipe with family! Kudos to you!

This is a wonderful recipe to make as is. I did make one change...I added a ton of ham. I would change nothing about it! Yummy as is....but also adaptable for personal changes. (like bacon & onion)

I made this twice. The first time I made it exactly as written, that's why it gets 3, maybe 4 stars. I thought it was missing a bit of depth and dynamic. For a 5 star recipe substitute one of the cans of potato soup for mushroom, add chopped onion, more ham (or ham and back bacon/peameal bacon since I had some left over from another recipe), and crumble some real bacon on top, make sure the bacon is fairly crispy first, then put on top for the last 10 minutes. I promise great results, and to wow your guests! Also, the second time, I made this the night before. Which made made it super easy in the morning to just pop it in the oven.

SO good and SO easy! I LOVE this recipee. It's also a good recipe where you can mix everything up the night before and then just pop it in the oven in the morning

This is a great recipe for leftover ham and doesn't necessarily have to be for breakfast. I used a 4 ounce can of green chilies and added a ton of taste to this dish. Great quick meal.

I like this dish. I added in a whole chopped bell pepper. Mine came out a little runny, I didn't have the problem of it being dry. I think it might be better if you layered the ingredients rather than mixed them all together

I was really disappointed in the consistency of this dish. It was not creamy and saucy like I had hoped. It almost seemed "curdled". I followed directions exactly but think it needed some 1/2 and 1/2 or milk to thin out the sauce and provide a better texture. None of the kids (ages 8, 10 and 15) would eat it.

I used 3 cups of creamy potato leek soup. I added some salt, pepper and creole seasoning. Next time I will try 1 cup of sour cream like some others have suggested. I also omitted the grated cheese. I am glad we'll have some leftovers to enjoy tomorrow!

Like many of the reviewers, I made a few changes that are just a matter of taste. I added onions to Southern style frozen hashbrowns & lightly browned them in olive oil with a bit of pepper. I also fried about 16 ounces of diced ham before adding this to the potatoes. I used one can of cream of onion & one can of cream of potato, however, I think next time I'll try just the potato. I also topped the dish with a sprinkling of french fried onions. This is a keeper & will be added to my cooking rotation. It's filling & a great way to stretch your meat budget. I served this with a Ramen Noodle Salad & it was a wonderful combination of flavors and textures.

Very tasty and easy to make. I used the potatoes that had green peppers and onions in it. I also used both diced ham and spicy hot sausage. This recipe is a keeper.
