This is very good and easy to make. It is a good base recipe and great as it is, but you could add onions, peppers or bacon to spice it up further. The kids and hubby love it, too!

I made a large 13 x 9 pan of this and it was GONE very soon afterwards. It is great with eggs in the morning. Even my picky toddlers liked it.

I made some revisions as I went along. I added an onion chopped, one stalk of celery choppped and on the top of the casserole I put crushed Ritz crackers and then topped with the Parmesan Cheese. I also added salt and pepper in the mix. This Recipe is GREAT! My children liked it as well.

This was very good. I normally shy away from recipes with condensed soup and processed foods, but this was very easy and those I served it to enjoyed it. I loved that I could just throw everything into a dish without any extra cooking. I did check the calories and sodium on the potato soup can, and found them acceptable. Not great, but acceptable for what I was looking for in this recipe.

Just made this for a church potluck today and didn't bring home any leftovers. People loved it! I used ore ida country inn creations, hashbrowns with peppers and onions. Delicious! Thanks for the great recipe! Will be making this again for sure.

Yummy recipe we just had these again. It makes a great side dish but because this is sooo rich you cant eat a lot of it. I cut my recipe in half when its only my husband and myself eating them that way none goes to waste.

Very rich. I used Potatoes O'Brian like everyone suggested. It was good, don't get me wrong. I think next time I will crumble up bacon instead of using ham. It was so easy to make!

Good base recipe- but made quite a few additions. I used potatoes O’ Brian, with the peppers and onions already in it. Instead of dicing the ham, I layered 4 thick cut, sliced, smoked pork chops on top. Added cheese and French fried onions on the top. This recipe needs seasoning for sure- pepper, paprika, a dash of cayenne, garlic power, and half of the cheese I used was pepper jack as well. This made it really flavorful and gave it more of a southwestern kick. Really, really good. **Update**- I have started making this with light sour cream, the "Healthy Request" version of soup, and 2% cheddar cheese and it turns out exactly the same.

A great breakfast dish. I prepared the dish the night before and just tossed it in the oven in the morning. I used only half the sour cream, 12 oz of cheddar cheese, cubed thick cut Black Forest Ham, and frozen O'Brien cubed potatoes that contained peppers and onions. I think next time I could go with 8 oz of cheddar for less cheesiness and residual oil. A simple recipe that tasted great.

The family loved this recipe! I used 1 can cr of pot & 1 can cr. of celery b/c that is what had on hand. I was afraid of the parm cheese burning on top b/c of a dif review, but it turned out brown and crunchy. Delicious & cheesy!
