I used 3 cups of creamy potato leek soup. I added some salt, pepper and creole seasoning. Next time I will try 1 cup of sour cream like some others have suggested. I also omitted the grated cheese. I am glad we'll have some leftovers to enjoy tomorrow!

Like many of the reviewers, I made a few changes that are just a matter of taste. I added onions to Southern style frozen hashbrowns & lightly browned them in olive oil with a bit of pepper. I also fried about 16 ounces of diced ham before adding this to the potatoes. I used one can of cream of onion & one can of cream of potato, however, I think next time I'll try just the potato. I also topped the dish with a sprinkling of french fried onions. This is a keeper & will be added to my cooking rotation. It's filling & a great way to stretch your meat budget. I served this with a Ramen Noodle Salad & it was a wonderful combination of flavors and textures.

Good base recipe- but made quite a few additions. I used potatoes O’ Brian, with the peppers and onions already in it. Instead of dicing the ham, I layered 4 thick cut, sliced, smoked pork chops on top. Added cheese and French fried onions on the top. This recipe needs seasoning for sure- pepper, paprika, a dash of cayenne, garlic power, and half of the cheese I used was pepper jack as well. This made it really flavorful and gave it more of a southwestern kick. Really, really good. **Update**- I have started making this with light sour cream, the "Healthy Request" version of soup, and 2% cheddar cheese and it turns out exactly the same.

Very tasty and easy to make. I used the potatoes that had green peppers and onions in it. I also used both diced ham and spicy hot sausage. This recipe is a keeper.

I'd never used cream of potato soup and was a little hesitant to do so, but this dish turned out so yummy I'm glad I did! I added some chopped onion, garlic, paprika, pepper, and cayenne (we like things with spice in our house!) Otherwise I followed the recipe exactly and it turned out perfect! Thanks for a great recipe!

This went over well for a brunch but I made lots of changes after reading the reviews. First I used O'brien potatoes cubed not shredded, added more spices (garlic and onion powder, paprika and pepper) and quickly browned the hash browns prior to adding them into the casserole mixture. I think this helped the texture and prevented them from becoming mushy after cooking. I substituted cream of mushroom with garlic for one can of the cream of potato (still used one can of the cream of potato, too). I used one large Ham Steak and I browned it well, cubed it into pieces and added to the mix. I used less cheese than stated and once the casserole was almost done, I added a bit more cheese and some french fried onions to the top of the dish and allowed to melt and brown a bit. Every loved it, it was flavorful and the texture was nice without being mushy. While my changes did add a bit of prep time, it was worth it for the final result.

I rated this before but wanted to add something. I noticed someone commented that she didn't like the potato soup flavor in this recipe. I totally agree! It has a really funny taste. That was what was messing it up for me. So I substituted split pea soup and it is delicious! Plus, the kids (who love this stuff) get more veggies snuck in.

I made this with reduced fat sour cream, 2% milk shredded cheddar and lean ham to cut some of the fat . YUM!

YUM! I followed the advice of previous reviewers and used 16oz of chopped ham and I also put this together the night before I needed it and let it come to room temperature for 30 minutes before baking it. Delicious and easy!

It was only okay. I thought the taste of the sourcream was over powering, I would rather taste more cheese than sourcream. I will keep looking for a better tasting hashbrown casserole.

I had such high hopes for this dish. The consistency was great and the only thing I added was a tablespoon minced onions. My problem is I just don't like the taste of "Cream of Anything" soups. I have nothing against using them on occasion but they give a certain taste to dishes that you can always pick out. I'm going to try this again by making a roux instead and see how it comes out.

Absolutely delicious. I followed the recipe exactly. Next time I will double the ham, my hubby and I agreed that the recipe was a little short on meat, but other than that it was soooo good and so easy. I ate the leftovers for both breakfast and lunch today :). Thank you for the awesome recipe!
