This was good, but it needs something to cut the sour cream (it's a little overwhelming). Possibly some salsa, cumin, and a few sliced black olives. I plan to make this dish again, but I'll probably cut the sour cream back to 1 cup, and add a few ingredients to pump up the volume (and make it a little healthier).

absolutely adored this recipe. Browned the onions added garlic and onion powder. Followed the rest exactly. Ate This for days and wanted more!

We enjoyed this rice tonight. My stomach doesn't handle great quantities of fresh onion, unfortunately, so I skipped that step (saving the butter calories/fat too) and just added onion flakes to the mix. I failed to realize that our dinner plan required this to bake while our fish broiled, so instead, I microwaved this dish. I mixed half of the cheese in with everything and sprinkled the rest on top, then microwaved for 5 minutes. It was perfect! Definitely yummy. It is a creamier recipe, so I just may have to play with it to find less creamy versions so regularity of serving isn't too unhealthy! :)

I almost didn't make this because of some of the very negative reviews. This is a wonderful dish and I will make it again!!!!! I used only half of the sour cream since that is all I had and it turned out great. I threw in a little fresh garlic and some leftover roast beef. We ate it with Mexi-Mix Hot n Spicy pickled veggies. To die for! ****UPDATE**** The 2nd time I made this I had only 1 can of green chilies so I substituted 1 can diced tomatoes with green chilies and about 1/4 cup of HOT pickled jalapeno juice. It was far beyond delicious and I was almost unable to stop eating it LOL

I made this as a side dish to the Pork Chalupas recipe on this site. Although my friends liked it, I found it relatively bland. For the amount of cholesterol in this dish, it didn't taste good enough to counter the guilty feelings of ingesting so much fat. I probably won't make this again.

I only used 2 cups cooked rice and 2 cups sour cream and enough cheese to cover the top, I was outof green chilis so I used pickled jalapenos.. Topped with some green onion. This was ok but not the best, maybe with some salsa added in it would have been better.

Super good, but didn't waste time layering everything. Just mixed it all together and topped with cheese and then baked. Yummy

cut the recipe in half and still had yummy left overs! just a quick tip - when reheating in the microwave, put a small cup of water in the microwave too- something my grandma told me when heating up rice so that it doesn't dry out. thanks for posting!
