Ingredients

  • 3 cups fresh broccoli florets
  • 3 cups fresh cauliflowerets
  • 3 celery ribs, sliced
  • 1 small onion, chopped
  • 2 cups water
  • 1/2 teaspoon celery salt
  • 3 tablespoons butter or margarine
  • 3 tablespoons all-purpose flour
  • 2 1/3 cups milk
  • 1 pound process cheese (eg. Velveeta), cubed

Directions

  1. In a large saucepan, combine the first six ingredients. Bring to a boil. Reduce heat; cover and simmer for 12-15 minutes or until vegetables are tender.
  2. Meanwhile, in a small saucepan, melt butter; stir in flour until smooth. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; add cheese. Cook and stir until cheese is melted. Drain vegetables; add cheese sauce and heat through.
