I don't know how others cook, but I adapt every recipe I try to the tastebuds of my family!! So, for those of you who said it was bland, season it with what your family likes (just an idea)!! Ok, so I chopped my onions and cooked them in the pan where I sauteed the chicken, added a can of cream of mushroom soup, green chiles, velveeta, shredded cheddar cheese and cooked until cheese was melted. Put the rice on the bottom, then the egg mixture, followed by the soup mixture then shredded cheese on top. I seasoned the chicken breast and egg and soup mixture with garlic and onion powder, alpine seasoning, pepper and cajun seasoning. This turned out fantastic and of course, my family loved it!!!! I baked it for about 40 minutes, mmmmm!!!!

This recipe was tasty! But I changed a few things. 1. Instead of combining the rice and broccoli, I pressed the rice into the bottom of the pan and combined the: broccoli, cream of chicken soup, eggs and milk in the blender. 2. I spread the chicken and onions over the rice and poured the blender contents over that. 3. Next, I topped with 8oz. of shredded cheese, followed by panko bread crumbs. 4. Bake at 350 for 30 minutes, add more cheese on top if desired and cook for an additional 10 minutes. 5. Broil for 3-4 minutes to get a brown crispy top and you're set! * The only thing I would do differently next time would be to add some cheese IN the mixture since the bottom half of the casserole IS a bit bland without it.

My husband and I really enjoyed this recipe. We are of the mind that not everything has to be over-spiced, so I don't agree with the other reviewer on the "bland" remark. Add a little extra salt (and I used a yellow onion, rather than the green...) and it's a nice, easy meal to feed the family on a cold evening. You can't go wrong with broccoli, rice, and chicken in my mind...
