Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Prepare a 9x13-inch baking dish with cooking spray.
  2. Mix cooked brown rice, black beans, diced tomatoes with green chile peppers, ricotta cheese, mozzarella cheese, Parmesan cheese, parsley, and black pepper in prepared dish.
  3. Bake in preheated oven until cheese is bubbling, about 30 minutes. Garnish with tomato slice.

this recipe is a good base for u to make it into your own. i substitute parmesan cheese for 1 package of mexican blend shredded cheese. i mixed all ingredients in a bowl and then added to a 9x13 pan. added mozzarella and mexican blend chesse to the top and baked it. added sliced tomatoes to the top and served hot

This recipe is really good. I was looking for a recipe to use the black beans I had in my pantry. Glad I choose this one. I will be making this one again. I made it exactly as written, except I used white rice. Thanks for the new addition to my recipe folder.

This was amazing! We added some pre-cooked cubed chicken, a little garlic / onion salt and cheese to the top. One of the kids favorite meals for sure!

Very good! I added some garlic powder, and topped with avocados and sour cream. I will definitely make this again.

I enjoyed this very much. I will be making it again. I added jalapenos and served it with tomato, avocado, and sour cream.

Really good & filling! I made as directed, but added minced garlic, onion powder, smoked paprika, cilantro, & parsley to the mixture. Very quick and easy to make.

I had most of the ingredients on hand, I substituted shredded jack and cheddar cheese for the mozzarella and parmesan. It turned out great. Just happened to search for a recipe using rice, black beans and cheese.
