INGREDIENTS
1 cup uncooked long grain rice
1 garlic clove, minced
2 tablespoons butter or margarine
3 cups water
2 medium carrots, shredded
2 teaspoons beef bouillon granules
1 teaspoon dried parsley
1/2 teaspoon salt
1/2 teaspoon dried basil
1/2 teaspoon dried minced onion
1 pound ground beef, cooked and drained
1/2 cup shredded Cheddar cheese

DIRECTIONS
In a large saucepan, saute rice and garlic in butter until golden brown. Stir in water, carrots, bouillon, parsley, salt, basil and onion. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. Stir in beef. Transfer to a greased 9-in. square baking dish. Cover and bake at 325 degrees for 45 minutes, stirring twice. Uncover; sprinkle with cheese. Bake 5 minutes longer or until cheese is melted.

This was pretty good. It smelled absolutely fantastic too as it was cooking. My boyfriend kept popping into the kitchen to see what it was. We did add extra cheese though and we used cheddar and mozzarella.

Excellent, and even my extremely picky husband loved it. I didn't have carrots so used green peppers, which made for a great taste combination -- they were a bit soggy after simmering and baking, though, so next time I'll hold off on adding them until the last couple minutes of simmering prior to adding the beef. I find that the bouillon is salty enough that the salt can be omitted from the recipe. Because we like cheese, I added a bit more than the recipe calls for.
