INGREDIENTS
1 1/2 pounds ground beef
1 1/2 cups chopped onion
1 cup diced celery
1 cup diced green pepper
2 garlic cloves, minced
1 pound process cheese (eg. Velveeta), cubed
1 (10 ounce) can diced tomatoes and green chilies, undrained
2 teaspoons chili powder
2 teaspoons ground cumin
1 1/2 cups crushed corn chips
Shredded lettuce
chopped green onions
2 large tomatoes, cut into wedges

DIRECTIONS
In a large skillet, cook the beef, onion, celery, green pepper and garlic over medium heat until meat is no longer pink and vegetables are tender; drain. Stir in the cheese, tomatoes, chili powder and cumin. Cook and stir over low heat until cheese is melted. Stir in corn chips.
Line six salad plates with lettuce; sprinkle with green onions. Top each with 1 cup beef mixture. Garnish with tomato wedges.

Very good just as it is. I used 2% velveeta processed cheese. I didn't mix the chips in with the meat mixture. I was afraid this was going to be a bit bland by just reading it as we like a lot of spicy foods, but it turned out nicely after all. My guys topped theirs with sour cream. I topped mine with a generous amount of hot pepper sauce. We all cleaned our plates eating this one.

THIS TACO SALAD WAS THE BEST I HAVE EVER EATEN I RECCOMEND THIS DISH TO ANYONE!! IT WAS DELICIOUS!! AND I WILL MAKE IT AGAIN GREAT FLAVOR!!

YUMMY!!! I LOVE THIS RECIPE!! But then again, I LOVE cheese! Especially the Velveeta kind. Mmm! This is so delicious. My boyfriend thought it was good but didn't love it as much as I did. I think it was because of the Velveeta, he has never been too into melty/creamy cheese sauces- I on the other hand love them. All in all I give this recipe 5 stars! And will definitely make it again- when the boyfriend's out of town, more for me! :) Thank you again!

The was an EXCELLENT recipe and has now become something we enjoy on a regular basis. The only modification I made was that instead of the cumin and chili spice was that I simply used "taco" spice (should have made a better grocery list!) but I don't think it would have changed the flavor too dramatically. I used to be a big fan of Taco Salad but in the past few years have avoided it because I found it too boring, however this recipe was a nice welcome back to the taco salad world. Unique and enjoyable!

The ingredients are so simple and the results are so very tasty. I didn't have any cheese food (really, what do you feed cheese anyway?) so I used a block of cheddar I had in my fridge. I also used a 14oz can of tomatoes with peppers instead of a 10oz can. My family really enjoyed it and we will definitely have this again!
