Fantastic! For 12 servings I used a 16oz jar of mild salsa instead of 2 14.5 cans of diced tomatoes with green chilis and I added 2 tbsp garlic powder to the bean and rice mixture.

My whole family loved this, right down to the 2 yr old! All of my little boys asked for seconds even, and before they were even done eating they told me that I needed to make it again for dinner "tomorrow" night :) I used a 14.4 ounce can of plain diced tomatoes and then added a 114ml tin of mild diced green chilies instead of the diced tomatoes with green chilies (in the same can). These ingredients have become staples now in our house! YUM

pretty tasty dish for having no meat in it. I added 1 tsp of cumin to the onions and only used 1/2 onion instead of the full onion the recipe called for. I really like this dish. I will have to try it again with different beans. I think black beans would be yummy.

This was SO good! Best rice I have ever made...Used brown rice, and didnt have any diced tomatoes with green chilies so used a can of organic diced tomatoes instead. I will be making this again and again! Also served with Salsa Chicken on the food.com site. thanks!!

This was delicious and easy to make. The hardest part was waiting for the brown rice to cook since it takes so long! This was great served with fat free plain yogurt (in place of sour cream). Yum!

Definitely a throwback to when my father attempted to cook and could only do bean and rice casserole with Wolf Brand Chili. This is much healthier than his recipe and tastes better in my opinion. My 8 year old daughter insisted we have it again and was dissapointed when the leftovers were gone. A keeper for ease of making, relative healthiness and family approval!

This was a great easy dish to put together.......I added corn, hot peppers and mushrooms. I did not layer it i just poured it in the baking dish, topped it with cheeze and baked for 30min. My kids and husband loved it. I make it at least once a week!!! Great recipe!!!!!
