This was really great! Instead of the tomatoes and chiles, I used a can of tomato sauce. I also threw in a few spoonfuls of salsa. This had such great flavor! I served it on tortillas and it made a delicious burrito type filling! I will definetely be making this again!

This was really good. I followed the recipe exactly except for only using about 1/4 onion and it was perfect for us. It does have a little 'kick' to it, but it's not too much. I would say that it makes more like 4 servings, instead of 6, but that's me. My husband said he liked it, but would LOVE it with ground beef...

I've made this a few times now and really loved it. I made it to recipe the first time and liked it, but the next time I made it with white rice, a little ground beef, and added a little extra cheese for a little more flavor. Not as healthy, but a little better in my opinion.

delicious! this is just a great combination of flavors. my alterations: I used about half the amount of rice called for; I used only half an onion & added three or four cloves of minced garlic; I used a can of diced tomatoes with jalapeños because I had it on hand (this was a good choice!); I used 2 tsps of "colorado seasoning" instead of chili powder; I omitted the salt because the canned tomatoes were salty already; and I used between 2 & 3 cups of cheese because I needed to get rid of it. oh, and I used pepper jack instead of cheddar (personal preference). instead of layering the rice/bean mixture with the tomato mixture, I just mixed up everything, except the cheese, in one bowl. I think this worked really well because it allowed the rice & beans to better soak in the flavors of the tomato mixture. I layered the rice/beans/tomato with the cheese, and it came out great. it would make a wonderful dinner for when it's cold out.

This was very good and really fairly easy. I liked that it was meatless, since DH and I could do with less meat in our diets. I had to sub black beans for the kidney beans to personal preference and I increased the cheese to 8 oz. and served with lo-fat sour cream. Easy to make, just a little time-consuming but we'll be having this again.

I added the can of italian style tomatoes (with the basil and all that already in it), cumin, a cup of salsa... It turned out wonderfully, tastes like Mexican rice. I took the suggestion of others and added sour cream to my bowl - extra creamy and yummy!
