LOVE this soup. We have made this many, many times. I usually have to double it though. Use twice as much ground beef than what is called for.

I thought this soup was really tasty and filling, the kids loved it too. Only made a couple changes, used 4 cups beef broth instead(by accident), which works for me because I like my soups, soupy lol. I used a pound of hamburger instead of 1/2 lb and then only added a little sea salt, pepper and 1/2 to 3/4 tsp of ground mustard. Also used plain yogurt in place of sour cream because I was out. Turned out great! I will be making this again!

OMG, this is Restaurant Quality. The Sour Cream really tops it off. We used 1 1/4 Velveeta Cheese and Beef Broth. It was so delicious. We will be adding this to our monthly menu plan.

This soup is heavenly. I have made several changes, it makes it so much easier--I just melt some butter and sautee' the hamburger, MINCED onions (if my teenagers see an onion, they revolt), carrots, and celery in a pan, bring the broth to a boil in a big pot (I use more than is called for) and throw in FROZEN FRENCH FRIES to boil for a few minutes--they cook quickly, they are delicious, it is so much less work, AND when I called this soup "cheeseburger and french fries soup", all the teenagers gobbled it up, and they loved it--they would not have tried it otherwise. When the french fries have boiled for a few minutes, I throw in the sauteed meat and veggies and let them all bubble together for a few minutes more. I warm two cups (or more) of half and half, and shake it up with 1/2 cup or so of flour--add it to the bubbling brew, and it thickens instantly. (Add a little cornstarch in water if it is not thick enough). Then I add the cheese and the sour cream. Everyone at my house shouts for joy when they smell this cooking...and I never have leftovers to pack for my lunch!

I followed this recipe to a tee. And everyone (including my 13 month old) LOVED it. It was the right consistency for soup. Not too watery and not too thick. The only thing is we had to salt it a bit. Will definitely be making this again!

My family loves this soup. I add shredded cheese. The more you add, the thicker the soup gets. Very flavorful soup.
