This is a fabulous soup! It's super easy to change it up to fit your family's tastes. I like to add half velveeta and half sharp cheddar and I double the meat (we use ground turkey). I also add beef broth instead of chicken. I only add about half of the potatoes called for. I make this about once a month and always making a double batch to throw in my freezer. Its freezes and reheats beautifully.

Cooked potatoes, celery and carrots in the chicken broth. Cooked onions with hamburger. Used fresh parsley and a little cheyenne pepper. Good and hearty cool weather meal. Followed recipe only changing how it was cooked.

I used a full pound of hamburger because otherwise there was not enough meat and too much potato. I loved that I was able to "sneak' veggies into a soup but overall this soup was just okay. I used mild cheddar and wished I would have used sharp cheddar just for a little more cheese flavor. Not sure if I will make this again.

Absolutely wonderful! Didn't have enough cheddar so added velveeta and left out the sour cream but still tasted awesome. Oh also added about 1 tsp salt and increased everything a bit so I'd have leftovers. But I'm sure its wonderful without me muddling the recipe :)

We found this very comforting on a cold evening. I had all ingredients on hand but I did add Bacon, jalapenos, and bell peppers. My 3year old asked for more twice (and normally she eats like a bird). If I had fresh tomatoes I would have added them to top when served. I will be making this again (maybe even try it with ground Turkey).

This is one of those recipes where tweaking is expected. After all when we create a recipe the ingredient amounts are approximate. I rate it as a 4, as it presently stands, but made the following changes: doubled ground beef, carrots and onions (maybe basil and parsley too?); used 1 can beef broth, two cans chicken (would have used 3 beef but didn't have another on hand); I have no idea how much white sauce I made (1.5), but I made it a cheese sauce using 2 c. shredded extra sharp cheddar; added two cups shredded xshch at the end and a little bit of cooked bacon (didn't need it). 17-year old took it to school for lunch even though the container required a gift bag with a handle and "lots of tape around the edges." He has a very big football game tonight and I feel honored and so should you, Auntylene. You could contribute to three touchdowns!

This was really good. I left out the basil(family preference) added lots more veggies and used sharp cheddar, but kept everything else the same, and it was a hit. Served with slices of hot beer bread. Mmmmmmm, tasty!
