4 medium sweet red, yellow or green peppers
1/2 pound ground beef
1/4 cup finely chopped onion
2 cups cooked brown rice
1 (6 ounce) can tomato paste
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 tablespoon spicy brown mustard
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 cup vegetable broth
1 cup shredded Cheddar cheese

DIRECTIONS
Cut peppers in half lengthwise and remove seeds; set aside. In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. stir in the rice, tomato paste, ketchup, Worcestershire sauce, mustard, garlic salt and pepper. Spoon into peppers.
Place in a greased 13-in. x 9-in. x 2-in. baking dish; pour broth around the peppers. Cover and bake at 350 degrees F for 30 minutes. Sprinkle with cheese. Bake, uncovered, 5 minutes longer or until heated through.

Was easy and tasty! I didn't have enough pepper so I served the rest as minced beef rice but it was great recipe for it as well. I put whole onion for 2 serve to kill all of the bad smell throughly and more garlics so it was nice and garlicky.

Yum! I added some Italian Seasoning while browning the meat, and also used fresh, crushed garlic instead of the garlic salt. I had to sub. beef broth for the veggie, because I didn't have any. Delicious. I also froze a second tray of them for later this week - thanks so much for this one!!

Very Tasty! I followed the recipe for two people. I did spice up the meat per previous reviews by adding 2 tablespoons of oregano, fresh parsley, 2 tablespoons of seasoning salt, and a little extra worcestershire sauce when I was browning it. This gave the meat the extra zing it needed...I used white rice instead of brown, which worked just as well. Boyfriend loved it and he hates tomato sauce! Will make again!

I made these yesterday and they turned out very good. I used yellow and red peppers. The flavor was just right. I've switched to using brown rice vs. white since it's so much better for you - you can't really tell a difference in this dish. I will make these again.

This was delicious! I only had 2 peppers but left the portions the same so I'll make this again for lunch soon! I added some diced tomato, sliced mushroom, and black olive to the skillet I found it difficult to mix all the ingredients thoroughly in the skillet so I transfered it to a mixing bowl which helped. Other than that everything was great...and very tasty! Thanks :-D
