I, like another reviewer, didn't bother with the rolling. I put half the beef mixture in the pan, added the bacon and cheese, and topped with the other half of the beef. Very good taste but as my husband said; "doesn't taste much different than any other meat loaf"

I made this for dinner tonight, and it was outstanding! I did make some changes. I used cheez it crackers instead of bread crumbs, and mexi blend cheese instead of the cheddar. Instead of rolling it into a pinwheel, I layered the cheese, along with some sauteed onions, in the actual loaf, which turned out great. I also put a few strips of bacon on top while it cooked. It was mouthwatering good!

I made this for my crew on the boat, and they loved it! Everyone on the boat ate it!! I found it really easy to roll the meatloaf up like a "jelly roll" i put tin foil on a cutting board and put the meatloaf on it and filled it then rolled it, it didn't stick to much.....I RECOMEND PUTTING TIN FOIL ON THE PAN YOU COOK THIS IN!!

This recipe has become a family favorite for sure. My son asks for it all the time. I like to add olives and Italian seasonings to the meat mixture before rolling, as well as using pepper jack cheese instead of the cheddar just because it's a favorite of ours. Either way, it's delicious and I never have leftovers.

I made this just a few nights ago and my husband and I both loved it...okay well I didn't actually make this...I took the oringinal recipe, substituted ground turkey for the ground beef, used seasoned breadcrumbs instead of crackers, added some minced garlic, and just mixed it all together and put it in the pan. Put BBQ sauce over the top. My husband says it's his new favorite so I will be making this more often I'm sure. It's a great base recipe for meatloaf, just tweak it the way you think your family would like it and go from there.

The guys in the family said that this is "the bomb!" I did make some changes. This is what I did: 2lbs ground beef, 1 egg, 1/2 cup milk, 1/2 cup seasoned bread crumbs, 2 cups shredded cheese, the salt & pepper and added 1 tsp garlic powder. I mixed it all together and put it in an 8x8 loaf pan lined with foil. I also topped it with sliced bacon. I baked it at 350 for 50 minutes. It was very good!

I mixed all the ingredients together, reduced cheese to one and three quarter cups and baked for an hour at 375. It was delicious. Even my Mom, who is not a meatloaf lover, liked it very much.

This was GREAT! I actually just mixed the shredded cheese into the meat mixture. It was really good...there was cheese all thru-out! I also put BBQ sauce all over the top. This was an amazingly easy, yummy dinner! Thanks!!!

My husband and I enjoyed this meatloaf immensely. I followed the ideas of other reviewers and, instead of rolling the meat, I took half and patted it into an 8x8 pan, sprinkled the cheese and some bacon on it, and then patted the other half of the meatloaf on top and pinched the sides closed. I used ground turkey, so there wasn't any grease to drain. The taste was terrific and we talked about putting some sauteed mushrooms and onions in the middle next time! Yum, Yum.

Despite my best efforts rolling it and pinching it closed, I still failed and the cheese ended up at the bottom of the dish. Also, it does need to bake longer than 1 hr, mine was in the oven for 1 1/2 hr. All in all, not the worst, but not what I expected. I won't make again.

This is great! I add sauteed mushrooms and onions. Overload it, it makes it taste even better. Just make sure you place it on parchment paper in a shallow baking pan to avoid mess. Soaking the grease off of it by placing it on about 6 pieces of bread per another reviewer, and it's fantastic. Served with whipped mashed potatoes from this site.

This meatloaf was pretty good. I don't know that it's a 5-star, but it's good. I liked it because it's a good low-carb option for meatloaf, which isn't easy to find. The best meatloaf I think I've had is http://allrecipes.com/Recipe/Brown-Sugar-Meatloaf/Detail.aspx. That one actually starts to taste better as a leftover. If you're looking for a low-carb recipe though, this is a decent tasting meatloaf for that. Otherwise, there is better out there.

My fiance ate this with no complaints. He's not a meatloaf lover so I consider it a good effort! I'm still looking for the "perfect" meatloaf but in the meantime this one will do nicely. A suggestion, though ... he insisted that I use American cheese slices. I'd recommend that anyone use SHREDDED cheese and NOT sliced because the slices kept sliding along on the meat and didn't get rolled up inside. That was a big reason for a lot of the leakage. I have a feeling that would not have happened if I'd used the shredded cheese like I planned.

This is an excellent recipe that leaves you with the ability to change as you please to suit your family's tastes. Last time I made it I used american cheese slices and mostly cooked bacon during the rolling process, and I finely chopped mushrooms and added them to the beef mixture. Delicious! Also, adding worcestershire, garlic poweder and/or BBQ sauce to the mixture before rolling is also recommended. Great base recipe. thanks!
