Red onions, goat cheese and cream star in this dandy tart. The onions are left whole, drizzled with olive oil and baked. Then they 're arranged in a prepared tart pan, doused with a thick egg and cream custard, and finished with slices of goat cheese. The tart is then baked and served warm or at room temperature.

Leeks, and red and yellow onions start in this savory, hearty pie. They 're sauteed together with white wine, and then combined with eggs, feta, parsley, tarragon and dill. This luscious filling is then poured into a tart pan lined with bread crumbs. The filled pan is then garnished with sliced tomatoes, and a sprinkling of parsley and bread crumbs. Bake, cut into wedges and serve.

Ham and Onion Pie

The filling for this double-crust pie is hearty and delicious. Lots of Jarlsberg cheese and sliced baking potatoes are layered with ham, onion and garlic. A rich egg-cream mixture is then poured over the layers and the finished pie is popped into the oven to bake up crusty brown.

German Zwiebelkuchen (Onion Pie)

Zwiebelkuchen is an onion pie from Swabia, in south-central Germany. It is a special time of year, in the fall, when the mom & pop winemakers will open a BasinWirtschaft in their barn or garage. They serve the new wine, fresh zwiebelkuchen, and perhaps some wurst, for a minimal fee. A few tables are set up, and they are open when they have time to serve. To indicate they are serving, they will hang a straw broom over the doorway. The combination of the onions and the 'green ' wine can have explosive consequences later on!
